One of the most difficult things about staying healthy this time of year is all of the amazing, sugar-filled treats that come along with it! That is why I absolutely love this grain free (paleo friendly!!), chocolate and cherry scone recipe. It truly satisfies your sweet tooth without leaving you full of guilt. Let’s get right into it.
Serves: 6
INGREDIENTS
- 1 1/2 cups almond flour
- 3 tablespoons coconut flour
- 1/8 cup honey
- 2 packets Stevia or Truvia
- 1 egg
- ¼ cup almond milk – or substitute another milk
- 3 tablespoons coconut oil or butter
- ½ teaspoon baking soda
- ¼ teaspoon sea salt
- ½ cup frozen dark cherries
- 1/4 cup chocolate chips
INSTRUCTIONS
- Preheat the oven to 350 degrees F
- Mix almond and coconut flours in a bowl. Add honey, stevia or truvia, egg, almond milk, butter or coconut oil, baking soda, and salt. Gently fold in chocolate chips and cherries.
- The dough is fragile. Shape into triangular or circle shapes about 1-2” thick and place on parchment lined baking sheet.
- Bake for 15-18 minutes until nicely browned on the top. Allow them to cool down slightly prior to eating. Enjoy this Yoga with Adriene session while you wait for the scones to cook!
- Top with butter, jam or enjoy as is! (Also a great treat to enjoy with a nice Dandy Blend beverage) 🙂
