Sometimes it’s difficult to find the time to make a healthy dinner when you’re always on the go. Trust me, I totally get it. Especially when working a 9-to-5, it seems as though there is no time left when you get home to relax, make dinner, and relax before bed. That’s why this kale medley recipe is one of my favorites – it’s easy, it’s delicious, and it’s done in no time.

Kale is such an amazing food to eat because it is incredibly versatile. Whether you have it as a salad green, as healthy baked chips, in a smoothie, or as part of your main entree (i.e., this recipe), it is delectable and very nutritious! With high fiber, no fat, and full of different vitamins and minerals, you cannot go wrong with kale.

So, without further ado, let’s get into how to make this amazing recipe! Listen to one of these Ted Talks while doing so to keep yourself entertained.

Ingredients:paleo kale dinner

  • 1 bunch of kale
  • 2 sweet potatoes
  • 1 onion
  • 1 apple
  • 1 package of Audi’s cajun chicken sausage (substitute black beans or nothing for vegan/vegetarian option)
  • 2 tablespoons olive oil
  • Salt
  • Pepper
  • Paprika (optional)
  • Cayenne (optional)
  • Hot pepper flakes (optional)
  • (Spices could also be smoked chili powder or something sweeter instead, get creative! It tastes great with just about anything. Feel free to add in the comments which spices you think taste best!)

Preheat the oven to 425. While the oven is heating up, spray a baking tray with olive oil spray and cut up the sweet potatoes, onion, and apple into cubes. After they’re all cut up, drizzle one tablespoon of olive oil on them and spread them out on the baking tray (add the black beans if you are substituting them for the sausage). Sprinkle the spices on the top to taste, then put it in the oven for five minutes. (If cooking the vegetarian option, cook it for fifteen minutes but make sure to mix the food around halfway through)!

(Carnivores only): While the vegetables/fruit are baking, cut up the Audi’s sausage into thin slices. Add to baking tray after the first five minutes and mix everything around, then put the tray back into the oven for 10 more minutes.

Wash the kale, then cut or break it up into medium sized pieces and drizzle the last tablespoon of olive oil on top. Mix in more spices to taste, then add to the top of the tray for five to seven more minutes (depending on whether you prefer crispier kale).

 

Voila! Kale medley complete. Notice how amazingly the sweet potato, apple, and onion mix with the kale to create a wonderful combination of sweet and salty!
